Carden Park School

One week later - lots of dirt being moved around - and if I'm not mistaken - there is cement in those forms.  So - the first walls are going up.  I couldn't figure out why this figure is so fuzzy - then realized that the hubs had pulled right onto the property and a cloud of dust had followed us.  I hadn't noticed it when I took the picture!  Sorry about that!






 Love the view!  Whoever ends up in that school will enjoy a fabulous view each and every day!

Skillet Enchiladas

This is a dish that the hubs and I enjoy.  It has all the flavor of enchiladas with a little more 'easy'!

Skillet Enchiladas

1 sm. package of corn tortillas - (your preference as to white or yellow)
1-2 lb burger - cooked and drained (1 lb for 4 people is plenty)
3 small cans red enchilada sauce
1 can diced green chilies
Ground cumin and onion powder to taste
4 c. shredded Colby Jack or Cheddar cheese

Mix cooked burger, chilies, cumin, onion powder and 2 cans of enchilada sauce in a skillet (I use an electric one - but you can also use a skillet on top of the stove).  Spread ingredients evenly over bottom of skillet.   Layer tortillas and cheese, twice, over meat mixture.  Cover with enchilada sauce and remainder of cheese.  Cover and cook and low/medium heat 'till hot and bubbly, cheese is melted and tortillas are tender.

Garnish with chopped green onion, sour cream, chopped olives, etc.

This is how I lay down the tortillas - I simply fold and tear to  make them the size needed to cover each layer.

Top each layer with some cheese and the final layer with cheese and enchilada sauce.  Put a lid on the skillet and let cook on low/medium heat till hot and bubbly all the way through.

Serve with your favorite garnish and enjoy!

Carden Park School

....or whatever they decide to name it.  We are getting a new school!!!!  Can I get a 'woot-woot'?!!! They are actually building two new schools in our community.  The first new schools to be built here in 40 years.  The school I currently work at is 103-104 years old.  Crazy, huh?  I thought it would be fun to show the progress every couple of weeks or so. They are getting footings ready.  I'm sure they want outside walls up as soon as possible so they can work on the inside throughout the winter.  Work hard Brooner Construction!  :)  We'll be cheering you on all along the way!

Don't you just love that view?  It's going to be fabulous.

The blessing of family


I have always loved beyond measure our daughters.  I can't even tell you how blessed I have felt in my life to have these two girls be not only flesh of my flesh, but my friends also!

And their husbands.....I love them to pieces!  They are as precious to me (to us) as if they too were with us from the beginning.  How fun it is to have sons.

And now - the circle widens as they are having their own families.  To see them grow in their role as parents is heart-warming.  To watch them become all that they have been prepared for in their role as parents.  To see these dads cradle, care for and nurture their children almost makes me weepy at times.  To know that these children are being taught about their Father in Heaven; you mention 'prayers' and little arms are folded - waiting - knowing.

I am humbled to be part of this great circle of family and am grateful for the blessing of these little ones that help remind us of those things that are of most worth!


Cookies I made for the 4th

They aren't spectacular - and if you look really close (so don't please, ok!) - you can tell that the red icing was too thick....it looks stiff and dry.  But I learned - it was the first color I did.  The rest look much better - don't you think?
